|Summary||0016639: centos-release-stream package is not installed during 8-Stream installation|
|Description||The centos-release-stream package is not installed during the installation process. This means that a freshly installed 8-Stream device will only pull updates from the 8 release channel, not the 8-stream release channel.|

I tested this and on both iso (net and full) and the same problem happens.
Keep in mind that I set the mirrorlist at http://mirrorlist.centos.org/?release=8-stream&arch=x86_64&repo=BaseOS
A work around is to install only the minimal system, reboot, install the stream-release from the extra repository, enable the desired Stream repositories and disable the Centos8 one. Then you can continue the installation of your system.
For the time being, I don't know how the updates will work BUT gnome's software doesn't show available applications. I don't know how to solve this.
